The weekend is coming, and we are already thinking: what’s the best way to celebrate it? We don’t know about you, but for us, no weekend or program is complete without food. And if you have candy, the better. Therefore, today’s post is for those who like to venture into the kitchen and serve very delicious dishes. In this article, we describe the simple procedure of making the delicious ice cream sandwich.
Notably, ice cream Sandwiches are the eighth wonder of the world. This is because it is the best combination in the world. This can be hugely attributed to the ingenious mind that came up with the idea of combining the best of both worlds, that is, the refreshing and creamy ice cream with the crispy cookies. Consequently, it is considered a great invention to eat ice cream with a thousand and one appetizing possibilities.
What You Need To Make An Ice Cream Sandwich
For cookies that will be the bread of our ice cream sandwich, you will need:
- 200g of unsalted butter at room temperature (if possible, give preference to French or Irish because they contain less water
- 120g of granulated white sugar
- 140g of brown sugar
- Two large eggs
- 1 ½ teaspoon of pure vanilla extract
- 295g of flour
- One teaspoon baking soda
- ½ tsp of salt
- 270g of chocolate drops of your choice (you can also cut a bar into cubes).
- To make our ice cream sandwich filling, you will need an ice cream of your choice. We opted for vanilla. Moreover, you will need a scoop of ice cream, a baking dish, and a spatula.
How To Make Your Ice Cream Sandwich Cookies
Preheat the oven to 170°C. Line two large baking sheets with parchment paper.
In the mixer or by hand, whichever you prefer, beat the butter until you reach a creamy point. Gradually, add the white and brown sugar and keep beating until fluffy. It usually takes somewhere around 2 minutes. Add eggs one at a time while continuing to beat the mixture. Thereafter, add vanilla and whisk until fully incorporated.
In another bowl, combine flour, baking soda, and salt. Then add the mixture created by the three to the dough we made in the previous step. Beat until they completely incorporate into each other. By hand, add chocolate drops and mix gently.
Put the mixture in the refrigerator and, if possible, leave to bake the next day. If the recipe needs to be ready for the same day, the minimum amount of time the mixture should be refrigerated is 2 hours.
When that time has passed, grab a scoop of ice cream and start baking balls with your dough. Distribute the shots in your baking sheets and leave a space for them to grow. Bake in the oven and let them cook over high heat (approximately 190°C) for 14 minutes.
How To Assemble Your Ice Cream Sandwich
Remove the cookies from the oven and let them cool for 5 minutes. It will make them still hot, but not so hot that you can’t even touch them;
Take your ice cream pot from the freezer. It will be very hard from cold, and that’s the intention.
On the different parts, use a spatula to get the ice cream out of the jar. It would be best if you did not form balls with it, but layers of ice cream.
Place a cookie on a plate and place a layer of ice cream on top of it. Then close with a second cookie.

Tips For The Sandwich
Notably, this recipe is not meant to be kept for serving or consuming other days. If for some reason, you have to store it, we recommend that you separate each of the ice cream sandwiches and wrap them in aluminum foil. Consequently, put them in the freezer.
